NEW ORLEANS – This year, on Nov. 27, marks what would have been Ella Brennan’s 100th birthday. Brennan is arguably one of the most influential female restauranteurs not only in New Orleans, but in the country, building on the family’s empire with Brennan’s Restaurant and Commander’s Palace.
To celebrate the day, the team at Commander’s Palace – lead by Executive Chef Meg Bickford – has created a tasting menu available for a limited time that is inspired by Ella’s favorite dishes. The menu includes New Orleans classics and new takes on past dishes available at Commander’s.
Some of the dishes include:
- Blue Crab Cheesecake: Jumbo lump crab, crab fat Creole cream cheese, New Roads pecans, meunière sabayon
- Pompano Pommes Anna: Grilled lemon marinated artichoke hearts, Herbsaint-basil cream under a crisp Pommes Anna tuile– It was once said that Mark Twain ate Pompano at Commander’s Palace!
- Veal Daube Glacé: 5 hour egg, Roasted chestnut mushrooms, brown butter, shaved truffles– an old Creole + New Orleans dish that Ella Brennan adored.
- Miso Apple Cobbler: Foie gras caramel and Creole cream cheese ice cream
