NEW ORLEANS — Eric Cook, Executive Chef and Owner of acclaimed New Orleans hot-spot, Gris-Gris, announced today his second restaurant concept – Saint John – set to open in mid-Sept.
at 1117 Decatur Street (home to former restaurant, Trinity, and long-time favorite,
Maximo’s). Saint John will specialize in Cook’s take on ‘haute creole cuisine,’ showcasing
the evolution of true New Orleans food, dating back to the 18th Century when Creole
cuisine first got its start, and presenting these flavors in an elevated, yet approachable
way.
Haute Creole. [ōt ˈkrēˌōl]. Drawing inspiration from simple, sustainable New Orleans family dishes meant to feed the masses and presenting those flavors in an elevated, yet approachable way.
Cook drew inspiration from traditional Sunday dinners in New Orleans and old times of
celebration, when French Quarter neighbors would go house to house, offering dishes
made solely from the season’s crops and catches, and sharing in the celebration of
community and good food. His menu will draw influences from the melting pot of
cultures that lent traditions, flavors, ingredients and cooking styles to the city- Italian,
French, Spanish, African, German, Caribbean.
The restaurant will be open for lunch, dinner and weekend brunch and feature an open
kitchen table and bar, first-floor dining and a second-story dining room with balcony
seating, also available for private events.
Saint John will host a Staffing Open House on Tuesday, August 31 from 10 am – 2 pm for
all front-of-house and back-of-house positions. Those interested are asked to bring a
resume and COVID vaccine card (masks must be worn while indoors).
