NEW ORLEANS – The New Orleans Culinary & Hospitality Institute’s (NOCHI) Fall 2024 cohort of Culinary Arts and Baking & Pastry Arts students will host Baiyū (pronounced bayou), a pop-up restaurant featuring the vibrant flavors of New Orleans cuisine with the bold, playful spirit of a Japanese izakaya. Baiyū will be open for lunch beginning Tuesday, Nov. 12, at NOCHI’s downtown campus, 725 Howard Ave.
The Baiyū menu and dining experience has been designed and will be executed entirely by the Fall 2024 cohort as their capstone project and culmination of NOCHI’s six-month culinary training and certification.
Guests will enjoy a unique dining experience that blends soulful Creole classics with the rich umami of Japanese comfort food. Guests can anticipate dishes such as boudin gyoza, miso gumbo and beignets with matcha and yuzu. A complete menu will be announced soon.
Reservations are open now for this culinary experience at www.nochi.org/baiyu. With NOCHI’s largest cohort to date, the popular student-driven pop-up dining experience has been expanded to span four weeks. Seatings are available Tuesday – Friday from 11:30 a.m. until 1 p.m. on the following dates:

Tue., Nov. 19 – Fri., Nov. 22
Tue., Dec. 3 – Fri., Dec. 6
Tue., Dec. 10 – Fri., Dec. 13
All proceeds from the pop-up dining experience benefit the NOCHI Scholarship Fund which allows NOCHI to open career pathways for students who rely on financial assistance to enroll.
“During Baiyū NOCHI students can put their hands-on learning to the test,” said Gerald Duhon, NOCHI executive director. “This sixteen-day restaurant experience is an opportunity to showcase all the hard work the students have put into the program. Baiyū not only allows them to execute their creativity and potential into something viable but also to meet potential employers and industry leaders,” Duhon added.
NOCHI offers certificate programs in Culinary Arts and Baking & Pastry Arts that cover 25 subjects and 650 hours of intensive hands-on instruction.
